Method of making bitter gourd vegetable

First step: First of all, cut the bitter gourd into round pieces and throw away the seeds. Now, add some salt to the bitter gourd and keep it covered for half an hour.

Second step: In the meantime, prepare the masala for the bitter gourd vegetable. Roast the peanuts on a hot pan. Now roast red chilli, gram lentils, black urad dal, fenugreek, cumin, coriander powder on that pan. Grind the roasted spices finely in a grinder.

Third step: After half an hour, the bitter gourd will have released water due to salt. Now squeeze out the water well and fry the bitter gourd in a pan on low flame. When the bitter gourd is fried, take it out.

Fourth step: Now add oil to the curry and temper it with mustard seeds, cumin seeds, red chillies and asafoetida. Now add onion to it and after it turns light brown, mix roasted bitter gourd in it.
Fifth step: Mix onion and bitter gourd well and add the prepared dry masala. After a few minutes, add tamarind water, salt as per taste, turmeric and garlic paste. Let the vegetable cook for 5 minutes. Your bitter gourd vegetable will be ready. You can eat it with rice.

Onion – 1
Cumin seeds – 1 tsp
Coriander powder – 1 tsp
Turmeric – 1 pinch
Green chillies – 1-2
Green coriander – 2 tablespoons
Mustard oil – 3 tablespoons
Garam masala – 1/4 tsp
Mango powder – 1/2 tsp
Salt – as per taste
Tamarind water – half a cup
50 gms peanuts
2 red chillies
2 teaspoons gram lentils
Asafoetida – 1 pinch
2 tsp black urad dal
